Submitted by: Flo BrandstetterThis was a side vegetable recipe that my mother made for Thanksgiving and Christmas. I bake it also over the holidays.
Ingredients:
- 2 cans whole kernel corn, drained
- 2 eggs
- 2 to 3 tablespoons of flour
- 2% or Whole Milk (just enough to cover)
- 1 tablespoon sugar
Preparation:
Drain whole kernel corn, and place in a medium greased casserole baking dish. Pour enough milk to cover corn. Stir in 2 eggs, and sugar. Sprinkle flour to thicken (about 2 to 3 tsp.); stir. Cut a few small pieces of margarine or butter and place on top. Place casserole dish in 325 degree oven. After about 5 minutes, when the margarine melts, stir. Bake for 45 minutes to 1 hour , or until lightly browned.

Submitted by: Flo BrandstetterThis is a recipe that I received "tucked" in an old "Canter" family cookbook. Though not an old recipe, I'm sure that my aunts prepared this often. It's pretty easy to prepare and delicious! I also have used shredded cheese in the mixture.
Ingredients:
- 8 cups thinly sliced potatoes
- 1/4 cup chopped onion
- 1 can (10-1/2 oz.) cream of mushroom soup
- 1 can (10-1/2 oz.) cream of celery soup
- 1 cup milk
Preparation:
Spread 4 cups of potatoes in bottom of greased 12 by 7-1/2 by 2-inch baking dish. Combine remaining ingredients (salt and pepper, if desired). Pour one half of the soup mixture over potatoes. Repeat layers. Cover and bake at 350 degrees for 1 hour. Uncover and bake 30 minutes longer.
