Easy Shrimp Creole

- 1 green pepper, chopped
- 1/2 C. diced celery
- 2 T oil
- 1 1/2 C. water
- 1 bay leaf
- 1/8 tsp. pepper
- 1/2 C. onion, chopped
- 1 garlic clove, minced
- 1 - 6 oz. can tomato paste
- 1 T. salt
- 1/4 tsp. thyme
- 2 C. cooked shrimp
Cook all vegetables in oil under tender. Add paste, water, and seasonings. Simmer 15 minutes, stirring occasionally. Add shrimp and heat. Serve with hot rice if desired.
