More Details:

1 lb whole wheat spaghetti

2 T peanut or sesame oil
2 C shitaki mushrooms, thinly sliced
2 scallions, thinly sliced

2/3 C water
4 tsp toasted sesame seeds
2/3 C tamari
3 T honey
red pepper flakes
1 2 piece of fresh ginger, peeled and finely minced
2 cloves garlic, finely minced

Bring a large pot of water to a boil and cook pasta. Drain and set aside.

In large skillet, heat oil over med-high. Add shitakis and scallions and cook until softened.

In a saucepan, heat 2/3 C water with the rest of the ingredients - sesame seeds, tamari, honey, red pepper, ginger and garlic. This doesn't need to boil, just simmer for a few minutes to blend the flavors.

Pour sauce into shitakis and toss with soba noodles.
