Broccoli Casserole

• 2 boxes frozen broccoli
• 1 can mushroom soup
• 2 eggs beaten
• 3/4 cup grated cheddar cheese
• 1/2 cup Hellmann's mayonnaise
• 1 small minced onion
• crushed Ritz crackers

1. Cook broccoli until broken apart (do not overcook).
2. While the broccoli is cooking, blend all other ingredients together (except Ritz crackers) in large bowl.
3. Drain broccoli and stir in with ingredients.
4. Pour into a greased casserole dish.
5. Cover with crushed Ritz crackers (or crushed potato chips; fried onion rings).
6. Dot with butter and bake at 325 degrees for 45 minutes to 1 hour.
